Every year, when Summer comes along and brings with her long days and soaring temperatures, we like to take the kids out after dinner for a walk and a cup of gelato. We are lucky to have one of the city’s best gelateria located near where we live and we order up to six different flavours each time we go. I know this may sound like a lot, but it really is just two medium cups’ worth (three flavours in each cup) of gelato to share between four people.
In order to be back in time for the children’s bed time, we have to have a quick and early dinner. This means planning a meal that can be prepared quickly and that uses minimal equipment so washing up will be a snap. Tonight’s dinner is just that – fresh halibut that is seared over high heat and paired with a fruity salsa that is easily put together. I bought a rustic loaf of bread from the farmers’ market this morning to go with our meal.
This salsa is one of my favourites. I made it many times last Summer and since peak mango season is here, it is the perfect time to revisit it again. The combination of fruit and vegetables is juicily refreshing and goes very well with simply seared fish or chicken. I once tried replacing mangoes with ripe yellow peaches and the result was equally fabulous. The recipe is by Gwyneth Paltrow and first appeared in the June 2011 issue of Bon Appetit magazine.
